Boxer Spirits
Brought to you by the award-winning chefs of Pasture Restaurant, Boxer is a premium spirits brand and bar designed to sit outside regular spirits categories, flavours and methods. We utilize unique, modern vacuum distillation methods, such as the rotary evaporator, alongside ancient techniques of fermentation to push the bounds of what's in your glass into 2023. While each distillate is unique in concept and flavour, they are designed to be equally enjoyed over ice or with simple soda/tonic, just as they are easily integrated into an array of classic cocktails.
Our premiere spirit is a distillation of Jalapeño chiles. Using the rotary evaporator we are able to remove the chemical capsaicin, responsible for making the pepper spicy. While the spirit is spicy on the nose, on the palate the spice is nonexistent and instead the green flavour of the chile is able to come through without the adulteration of the spice in a surprising and fresh way.
Each bottle is hand painted, with a wooden stopper that has been burned in Japanese shou-sugi-ban style. With very limited runs and releases, each Boxer spirit is a premium bottle worth adding to any spirit aficionado's collection. Spirits will be released on a seasonal basis, with a combination of permanent flavours (like the Jalapeño) and seasonal one-offs. Boxer will be available for purchase directly via online as well as through a very small selection of premium retailers, bars, and restaurants. SRP: $150. 700ml, 45% abv.
