Single Malt Traditions

1919 Single Malt Whisky is made following traditional methods with the use of only three ingredients; malted barley, water and yeast. The malt and water are mashed together and then distiller’s yeast added. Over the next 36-48 hours the wort ferments to give a low alcohol wash of about 8% abv. Once ready, the wash travels to the still house where the magic happens inside our handmade 1800L copper pot still.

The shape of our copper pot still and the interaction with the copper, define the light fruity character of our new make spirit. We take pride in only selecting the finest spirit to make the “heart” cut. This spirit will then be used to fill your private cask prior to aging. Over the following years the spirit will extract color aroma and flavors from the barrel as it gracefully becomes whisky.

Cask Selection

The oak accounts for most of your whisky’s flavor and all of its color. American Oak Quercus alba brings forth strong vanilla, spiced honey, coconut, cereal and fruit characteristics.

It is because of this we have sourced first fill A-grade Ex Bourbon Casks to use for your private cask.

The combination of a careful maturation of single malt spirit in the warm and humid surrounds of Auckland creates a distinctive taste of 1919 Single Malt Whisky.

Once the cask is selected we invite you to come to our distillery for your cask filling ceremony. A wonderful occasion with your fellow owners and family, to fill and lay down your cask together, learn more about the process, and toast this truly momentous occasion.

Casks will then be stored in the distillery’s warehouse where they will be looked after for their sleep of a minimum of five years.

Your Single Cask

Once your private Cask is ready for bottling, we work with you to personalize your labels. As a Private Cask Owner you may choose to bottle your entire cask, or reserve some for one later bottling. This will be a moment to savor with friends and family as you pour the very first glass of whisky from your own private cask.
